    Chinese white rice vinegar is less acidic than Western distilled white vinegar because it is manufactured from fermented rice.     • Replace with equal portions date vinegar, which is similar in color but sweeter.

    • Mix 1 tablespoon water, 1 1/2 teaspoons balsamic vinegar, and 1 1/2 teaspoons rice wine vinegar per tablespoon required.
